Easy Sweet Breakfast Pizza

I have always wondered how the people on Instagram create such delicious treats. They come up with new recipes and creations like a sweet breakfast pizza. However, using a friying pan and later the oven was too much work for me because I am kind of lazy in the mornings. Thus, I created my own breakfast pizza recipe and it turned amazing! It is so easy because you just need an oven and some ingredients!




















Easy Sweet Breakfast Pizza


Recipe (one small pizza):

for the dough:
2 tbsp     oats (quick cooking)
2 tbsp     buckwheat flour
1/2 tsp    backing powder
1/4 tsp    cinnamon
1/8 tsp    ginger
1/8 tsp    nutmeg 
              (all spices have ground texture)
1             banana
1/4 c       water

for the cacao creme:
1 tbsp     raw cacao powder
1/2 tbsp  carob powder
1 tbsp     agave syrup
1 tbsp     orange juice

Preheat the oven to 180 ° C. Mix all dry ingredients well. Take half of the banana and smash it. Add the smashed banana and the water to the dry ingredients and stir. Spread the dough on a baking parchment paper, put it on a grating and bake the pizza about 20 min. While baking, prepare the cacao creme. Spread the cacao creme on the pizza. Cut the remaining half banana in coins and decorate your pizza with banana coins and chopped pistachio or your preferred nut. You can also replace the pizza in the oven for some minutes in order to have a warm breakfast pizza.

Pancake Crumble ''Kaiserschmarrn''

A few days ago I tried to do coconut pancakes without any recipe. Well, the pancakes did not stick together as usual and I had to turn the pancakes into crumble but it was still tasty! If you want to try out new recipes or create your own ones, you have to improvise sometimes. If the recipe does not work at the first try, do not give up because you can create something special out of it. So I did! And I think it is good to share the recipe with you.




















Pancake Crumble ''Kaiserschmarrn''  


Recipe (about two servings):

4 tbsp         coconut flour
1 tbsp         buckwheat flour
1 tbsp         flaxmeal (ground flaxseeds)
2 tsp           coconut sugar
1 c               water
1 c               non-dairy milk
1 tsp            coconut oil
sprinkle of cinnamon, nutmeg and other desired spices 


Mix all dry ingredients except the spices. Then add the water and stir occasionally. After this you have to add the milk, stir well and you will get a sticky dough. Heat the coconut oil on a frying pan until it melts. Put the dough in the pan and let it fry until the bottom is slightly brown. Then chop the dough into crumble, add your desired spices and stir about a few minutes.
Serve the crumble with frozen raspberries, banana coins, almonds and a dizzle of agave syrup.

Raw Choco Mousse

What a shock! I did not write the recipe for the raw choco mousse! Shame on me... However, I have managed to build up the recipe because I was so great and thus, I had all the ingredients in my mind.
This healthy dessert is easy to prepare and unluckily, it will be eaten too fast like I did. You just need a few ingredients to create such a sweet treatment.


Raw Choco Mousse 

Recipe (one serving):

2/3 of        a half of an avocado
2 large       bananas
2 tbsp        raw cacao powder
splash of    non-dairy milk 
1               date
sprinkle of  nutmeg and cinnamon or other spices


Put the avocado, 1 1/2 bananas, date , 2 tbsp raw cacao powder in a blender. Add your favourite spices, I used cinnamon and nutmeg because I love the combo, and a splash of non-diary milk, just so much until you get your desired consistency. Blend all ingredients and try out. If you want to have it sweeter, add agave syrup or coconut sugar. You can also vary your sweet treat by adding your desired spices.
Then, cut the remaining half banana in coins and place them on the mousse. I recommend you to decorate 
your mousse with frozen raspberries and chopped almond because the combination is amazing!

Asian Spiced Rice Porridge

Today I wanted to eat something Asian. Since I bought rice flakes, I thought I could also make a porridge of them rather than oats. It was really delicious and I added no sugar, so it is up to you if you want to make your porridge sweeter in adding sweets (I prefer coconutsugar or agave syrup) to your porridge while shimmering or at the end as toppings!


Asian Rice Porridge

 

Recipe (one big serving):

2/3 c    rice flakes

1    c    water
1/2 c    non-dairy milk
1 tsp    pumpkinseeds
1/4 tsp ground ginger (add more if you like)
1/4 tsp cardamon
1/4 tsp cloves
1 pinch vanilla
1 pinch ground black pepper

First, roast the rice flakes and pumpkinseeds in a pot and try stiring occasionally to prevent burning the flakes. If they reached a slightly brown colour, add water and turn the heat lower.
If the rice flakes mostly absorbed the water, add the milk for more creaminess. Let the rice flakes shimmer until they almost absorbed the milk. Then take the pot from the stove and add all spices (trust me, the black pepper is harmless and give a nice switch) and stir well.
Top your porridge with sweet fruit purée, coconutsugar, peanutbutter, pecans and other favourite toppings.
